How Our Organic Grass-fed A2 Ghee Is Made | The Micro-Batch Craft Process
The How, Who & Why
We created this page to give you full transparency into how our ghee is produced: the sourcing, the slow-cooking method, the hygiene standards, and the clinical reasoning behind every step.
Premium ghee is not an accident, it is the result of controlled and conscious sourcing, slow heat, and uncompromising hygiene.
Slow-crafted in tiny batches from organic, grass-fed Guernsey butter. Every jar is produced using a controlled, clinical-style process that protects flavour, nutrient integrity and digestibility.
Handcrafted in the UK by a Registered Nutritional Therapist (scroll down to meet her), never mass-produced, never rushed.
Why Our Ghee Is Not Like Other Ghee
Most ghee on the shelf is imported, industrially processed and made in huge batches where speed and volume take priority over quality.
Our Organic A2 Ghee is different:
- A Single Ingredient With Complete Traceability - Our ghee contains one ingredient: certified organic cultured butter from predominantly grass-fed Guernsey cows. Nothing blended, nothing imported, nothing diluted.
- Guernsey cow’s grass-fed butter – Sourced for its naturally higher beta-carotene and A2 protein profile, giving a rich golden colour and nutty aroma.
- UK-made in micro-batches – Produced in very small volumes so temperature, timing and clarity can be monitored at every stage.
- Clinical-level process control – The same attention to detail used in a nutrition clinic is applied to the pan: heat, timing, foam, colour and aroma are all evaluated, not guessed.
- Zero blends, zero shortcuts – No mixed-origin fats, no added flavourings, no preservatives, no seed oils. Just one ingredient: organic grass-fed british butter.
This is ghee made as a therapeutic, everyday food not a commodity oil.
What Makes Our Ghee Premium
Organic Certification OF&G
Produced using certified organic butter and compliant processes, free from synthetic pesticides, fertilisers and GM ingredients.
Great Taste Award 2025
Independently blind-tasted and awarded for flavour, quality and consistency, not just packaging claims. See what the judges said about our ghee below.
A2 Protein Profile
Made from predominantly Guernsey cows, naturally rich in A2 beta-casein, a protein profile many people find easier to tolerate.
Gentle on Digestion
Clarification, foam removal and fine filtering significantly reduce lactose and casein, supporting sensitive digestion and gut-focused protocols.
Small-Batch UK Production
Crafted in controlled micro-batches in the UK rather than anonymous large factories, ensuring traceability from source to jar.
Single-Ingredient Purity
Just one ingredient: organic grass-fed butter. No anti-foaming agents, emulsifiers, colours, flavourings or stabilisers.
The Micro-Batch Craft Process
From organic grass-fed butter to clinically clean, golden A2 ghee.
1. Sourcing Grass-Fed Organic Butter
We start with certified organic, grass-fed butter primarily from Guernsey cows, chosen for their A2 protein profile and naturally deep yellow colour.
Guernsey cows predominantly produce A2 beta-casein milk, which differs structurally from A1 milk. Many people find A2 dairy gentler on digestion because it breaks down differently in the gut.
This butter has:
- naturally deep golden colour due to higher beta-carotene
- a nutty, rich aroma
- a granular texture ideal for ghee-making
- a higher proportion of stable, flavour-carrying milk fats
2. Slow Melting
The butter is added to a heavy-base stainless steel pan and slowly melted over low heat to avoid protein scorching and oxidation.
3. Gentle Simmer
Once fully melted, the butter is brought to a gentle simmer, temperature controlled, allowing the milk solids and foam to naturally separate from the pure butterfat.
4. Foam Removal
The pale foam (denatured milk proteins) is carefully skimmed off the surface to reduce lactose and casein, supporting digestive tolerance.
5. Clarification
The ghee is kept at a controlled low simmer until the milk solids sink and the liquid turns clear, golden and aromatic the critical “clarification point”.
6. Fine Filtering
The clarified ghee is triple filtered to remove residual milk solids, leaving a clean, bright fat phase.
7. Resting & Settling
The filtered ghee is allowed to rest so micro-particles can settle and the flavour can stabilise before jarring.
8. Jarring Into Sterile Glass
Each batch is decanted into pre-sterilised glass jars under hygienic, food-grade conditions to protect purity and shelf life.
9. Controlled Cooling
The jars are cooled at room temperature to allow a natural grainy-yet-creamy texture to form a hallmark of properly made ghee.
10. Batch Testing & Inspection
Each micro-batch is visually inspected for clarity and texture; labels and records are logged for traceability and quality control.
Our production follows a HACCP-aligned workflow with clearly defined critical control points. This includes:
- Stainless-steel cookware only
- Sanitised surfaces before every batch
- Temperature and time logs
- Allergen controls
- Traceable batch numbers
- 5-star UK Food Hygiene rating
The aim is not over-cautiousness, it is consistency, safety, and repeatable quality for every customer.
11. Labelling & Release
Jars are labelled by hand with and best-before dates before being released in limited quantities.
Meet the Maker
Our Organic A2 Ghee is made by a Registered Nutritional Therapist, Beenish Tariq member of the BANT (British Association for Nutrition and Lifestyle Medicine) & registered with CNHC (Complementary & Healthcare council), not a factory line.
- Every step is designed with gut health, inflammation and metabolic balance in mind.
Grass-fed butter contains:
- conjugated linoleic acid (CLA)
- short-chain fatty acids like butyrate
- fat-soluble vitamins A, D, E and K (in natural ratios)
- Temperatures and timings are chosen to minimise oxidation and protect natural fat-soluble vitamins.
- The process reflects the same functional medicine principles used in clinic, focusing on purity, digestibility and real-world use in therapeutic nutrition.
This is why batches are kept small: so each jar can genuinely meet the standards expected in a clinical nutrition setting, not just a supermarket shelf.
What the Judges Said - GREAT TASTE AWARD 2025!
(word for word)
Judges Panel 1:
This ghee has beautiful buttery yellow colour. It is really creamy in texture and not overly oily. It has a good mouthfeel and feels decadent. We like the creamy taste with tis nutty notes. When melted it has a silky smooth consistency and an inviting caramelised popcorn flavour. We'd love to cook with this at home.
Judges Panel 2:
The first impression of this ghee was of its wonderful golden colour. We enjoyed the nuttiness of the ghee and our mouths felt clean after eating, not at all oily. We thought that this ghee had been very well looked after, the melted ghee was perfectly clean. We went back for more.
Judges Panel 3:
Bright yellow ghee with a clear clarity, a beautiful depth of creamy, buttery flavour and a long finish. This is a lovely, honest product that says exactly what it is.

Addressing Common Questions
- Why is it expensive?
Price differences usually come down to purity, sourcing and production standards. This ghee is certified organic, Great Taste Award 2025 Winner, made from grass-fed Guernsey cows and slow-cooked in micro-batches here in the UK.
A lot of low-cost imports on the market are blended or adulterated, whereas ours is a single-ingredient, non-adulterated ghee produced under strict UK Food Hygiene 5-star standards.
It’s a premium product crafted for digestive gentleness, quality and flavour, so it naturally sits in a different category.
I can make ghee at home cheaper.
Yes, homemade ghee can be lovely! But the quality can be questionable. Replicating certified organic A2 butter, controlled temperatures, triple filtration and HACCP-level hygiene isn’t realistic in most home kitchens.
This one is for people who want certified organic A2 ghee, crafted the same way every time, using grass-fed butter and tested for purity.
Think of it like baking bread at home vs buying an award-winning artisan loaf, both great, just different experiences.
- Is this suitable for everyday cooking?
Yes. It has a high smoke point and stable fatty acid profile, making it ideal for frying, sautéing or adding to food at the end of cooking.
- How long does it last?
Unopened jars last many months in a cool cupboard. Once opened, store in a dry place away from moisture. Refrigeration is optional. We recommend using a clean spoon every time and using it within 3 months of opening. Remember our ghee does not contain any added agents or preservatives.
